Zesty SouthWest Mix

Here is one for the road!  This is a great mix to take with you on your travels.  The brown rice and black beans keep a nice texture and the spinach combined with mixed vegetables round out the nutrition.  Get creative with this one!  It is great rolled up in a burrito, or folded up in a taco.  Add some hot sauce for some added zest, maybe a sprinkle of nutritional yeast, and this will keep you satisfied until you return home!

Putting it together couldn’t be easier.  The night before you leave, just throw everything into your rice cooker.  While you are packing your bags, this is cooking away.  No standing in the kitchen watching a pot boil, stirring or putting out flames.  When the rice cooker is finished, just a few minutes of stirring everything together and you are done.

Ingredients

  • 2 cups Brown Rice
  • 1 package frozen Organic Spinach
  • 1 package frozen Organic Mixed Vegetables
  • 1 Lime, zest and juice
  • 2 teaspoons Chili powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Sea Salt
  • 4 cups Water
  • 1 can organic Black Beans
  • Tortillas (optional, Ezekial or Engine 2)

Directions

In a rice cooker, combine the rice and water into the pot.  Next, zest one lime, cut the lime in half and squeeze the juice into the rice.  Then add all of the seasonings and stir together.

Place the steamer basket on top of the rice cooker.  Place the bag of frozen spinach and frozen vegetables in the basket.  Spread around evenly.  Depending on which rice cooker you have, this should top of the steamer basket with just enough room to place the lid on top.  Press the start button.

When the rice cooker is finished, carefully remove the lid and steamer basket.  Rinse the can of black beans and then mix into the rice mixture.  Scoop everything into storage containers and allow to cool on the kitchen counter for about an hour.  Then put the lids on and store in the fridge.
