Sweet Potato Curry Wraps

For a long time now, I have been preparing food and bringing tortillas separately.  Sometimes I just eat the food I made while some meals I would roll it up in a healthy wrap!  Well, while visiting my professional bike fitter, I noticed he was eating a wrap for lunch that was pre-made from the local market which inspired me to bring you this same idea for traveling!  These wraps are delicious and nutritious!  The mix contains very little moisture, so the they stay fresh for the duration of a 4 day trip and there is no animal products to spoil!  These wraps provide an easy way to get in some leafy greens (iron, calcium, vitamin K, A, C) and the sweet potatoes are a great source of antioxidants, vitamin A, C, manganese, and potassium with a low glycemic index!  Having these pre-made means you can grab and go without having to form a messy assembly line when you are running late or on quick turns.



  • 2 Sweet Potatoes, steamed (or baked)
  • 2 Carrots (cut on bias)
  • 2 Celery Stalks (cut on bias)
  • 1 bunch Kale (finely chopped)
  • 1/2 onion (any color)
  • 4 Garlic Cloves (crushed)
  • 4 tsp Curry Powder
  • 1/2 tsp Salt (optional)
  • 1/2 inch grated Turmeric (optional)
  • 1 pack Tortillas (La Tortilla Organic Wheat, or Gluten Free tortillas)




Cut up the sweet potatoes in chunks and steam for 10-12 minutes or until tender (pierce with a fork).  Set aside in a bowl and mash together.
















































































In a skillet, dry sauté carrots, celery, onion, curry, (fresh grated turmeric-optional), and garlic for 3 -4 minutes, covered,  with 1/4 cup water. e

Add the chopped kale for one extra minute.  Add small amounts of water as needed to prevent from  sticking.

Add mixture to mixing bowl with mashed sweet potatoes and mix together.

Scoop mixture onto tortillas.  We used 1 1/2 cups per tortilla and this made 6 wraps.  Results may vary based on wrapping skillz!


Here is the step by step wrapping:  Center the mix and press together, then grab both sides.










































Pinch around the base to make a tight seal.




















Then, keeping the tortilla tight around the filling, start folding it over.





















Keep the edges tightly around the filling on the final roll over! Now you are left with a properly sealed wrap!




















Eat now, or save for later!










































Wrap each individual with plastic wrap and refrigerate!  Prepare these the night before your trip or just to have around the house as pre-made snacks with no effort!
