Summer Garden Macro Bowl

This is a perfect dish for any warm summer day, inspired by what we had from our own backyard garden!  A few fresh summer veggies and herbs mixed with some pre-cooked grains and legumes and this is ready in no time!

 

Ingredients

  • Quinoa (cooked)
  • Garbanzo Beans
  • 1 Kale Leaf (torn into pieces)
  • 1 Tomato (diced)
  • 1/4 Red Bell Pepper (chopped)
  • Fresh Basil (several leaves, chopped)
  • Dulse
  • 1/2 Lemon, squeezed
  • 2-3 tbsp Apple Cider Vinegar (to taste)

 

Directions

The amount of grains is up to you, so add a mixture of quinoa and legumes as the main base of this dish (around 1 cup quinoa to 1/2 cup garbanzo beans).  Then remove the leaf of one stalk of kale, shred it and mix into the grains.  Top with tomato, pepper, basil, and dulse.  Pour over the apple cider vinegar.  Adjust this to taste as the grains tend to absorb a lot of the flavor (the amount is listed more as a minimum to start from, adding from there).  Then squeeze the lemon over top, relax and enjoy!
