Strawberry, Mint Chocolate Delight!
Nothing says summer better than berries…Strawberries in particular. They seem to be as much the American standard at 4th of July and summer BBQ’s as hamburgers, potato salad and chips. So how can you spruce them up this season for a fresh new taste? Chocolate Mint and coconut of Course!
This summer one of the things we are growing in our earth box is chocolate mint. I had no idea this even existed but low and behold…it does and it smells just like chocolate mint. Now if you did not grow it this season you can look at your grocery store to see if they carry it or just use regular mint leaves and possibly even throw in some cacao nibs or small dark chocolate chips..mmmmmmm. This super simple, quick and yummy treat will quickly become a summer must have!
- Erythritol (or Stevia) – optional
- Shredded coconut
- Chocolate Mint (or regular Mint) leaves.
Slice strawberries long wise in 1/2 or 1/4’s and throw in a large bowl. Over top sprinkle with 1-2 stevia packets or 2-3 tablespoons of erythritol. Let sit in the fridge until you are ready to serve.
Once ready to serve place mint leaves on top of each other and slice across the leaves making small strips. Mix into strawberries
Top with shredded coconut to taste (or mix in a few tablespoons to the strawberry mix).
– optional choice to add in small dark chocolate chips or cacao nibs for added crunch and texture.
