Spinach and Kale, Lift your Spirits Salad

What do you do with left over butternut squash?  Well, there are many things but one we came up with the other night really just hit the spot!  We steamed up some up some butternut squash to make one of our favorite “cheese” spreads and had quite a bit left over.  We felt like something light and refreshing so figured, what better than a crisp colorful salad!  You can always substitute sweet potato or another soft but sweet/savory veggie of your liking if you do not have butternut squash on hand….However, we must say, this combo was a delicious and perfectly balanced.  This also pairs nicely with any of our lemon or vinegar based dressings.

 

Ingredients:

  • Bed of spinach
  • Russian Kale – 3 leaves – toss or layer over spinach
  • 1/2 cup Butternut squash
  • 1/2 cup garbanzo beans
  • Celery 2-3 stocks
  • 1/4 – 1/2 Cucumber
  • Onion chopped
  • Brown rice (1/4 – 1/2 cup) or Quinoa or Grain of choice
  • Walnut pieces
  • Sliced avocado
  • Sliced tomato
  • Lemon slices
  • Salt and pepper
  • Optional:  Butternut cheese
  • Optional: Sprinkle with flax meal and/or pumpkin seeds too!

 

Directions:

Clean and chop (or slice) kale, celery, cucumber, onion and tomato

Putting it together:

Well, there are more ways than one to put this salad together. If you so choose you can throw everything in the top set of ingredients in a big bowl and toss.

Then top with Brown rice, Avocado, walnut pieces and squeeze lemon over top.  Salt and pepper to taste and garnish with tomato slices.

Another way to do it is lay down a bed of spinach, top with the kale and butternut squash and then layer on the rest of the ingredients.  Either way you will end up with a nutritious, super salad power house!
