High Protein Pasta

This dish is perfect for when you don’t feel like spending all night in the kitchen.  A few veggies, dark greens, pre-made pasta sauce and whole legume noodles (or whole grain noodles).  The whole meal is ready in less than 15 minutes for an excellent and nutritious meal that is high in protein, nutrients, antioxidants and fat free.

For the noodles, we love the new organic bean pasta noodles from Explore Asian Authentic Cuisine.  High in protein (about 24 gram per serving!), iron, fiber and other nutrients and grain free!  You can purchase them in bulk by clicking on our Pilot Fitness Amazon Store and clicking on the “On the Go Nutrition.”  They come in several varieties including:

For the pasta sauce, it is difficult to find one that is oil free and sugar free, but the 365 brand has it and it’s delicious (available at Whole Foods).



1 pack Legume Noodles

1 Jar 365 Fat Free Organic Pasta Sauce

Chopped Veggies (Cauliflower, Carrots, Celery, Zucchini, Eggplant, etc.)

Dark Greens (Kale, Chard, Collard Greens, Spinach, etc.)



Just chop a few of your favorite veggies, while the water for the noodles comes to a boil.

Then add the noodles to the water and while that cooks, add your veggies in a separate skillet.  Add 1/4 cup of water and cover for a quick steam for 3 minutes.  Add the dark greens and steam for one more minute (4 minutes total).  Add pasta sauce, heat for one – two more minutes, mix and done!

Top noodles with sauce and veggies.  We link to add sliced avocado and sprinkle with nutritional yeast and some dulse flakes.
