Papillote Veggie Bake

Enjoy perfectly cooked, moist veggies in just minutes with these simple parchment paper wrapped veggie pouches.  Lock in flavor without added fat and have a perfect meal in just minutes.  You can even make these a day in advance and pop them in the oven when you get home for a meal that is ready in just 15 minutes.  Kids will love them too; I sure did!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients : for one wrap

– Parchment Paper (natural, unbleached)

– 1-2 carrots sliced (I used small yellow carrots.  Use whatever you have)

– 1/2 beat

– 3 garlic cloves

– broccolini

– 1 head bok choy

– 1/4 -1/2 white onion

– 1/2 cup edamame (shelled and frozen)

– 5-8 olives: green & black

– 3 crimini mushrooms diced

– 2 small red peppers sliced

– balsamic vinegar

– salt flakes to taste

– fresh ground black pepper

– Thyme sprig

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Directions

Preheat oven to 400°F

Fold parchment paper in 1/2, crease, and open back up

Slice veggies and place in one half of parchment paper.  Add in edamame and lay Bok Choy over top.  Sprinkle with salt flakes and pepper to taste and drizzle with balsamic vinegar.

Fold other half of parchment paper over so ends meet.  Fold edge closest to you along the length of the paper.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Begin at the seam (1/2 crease) and crimp in with a diagonal fold.  Continue around to the other side overlapping the folds as you go.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Bake for 20 minutes.

Use caution when opening to avoid any steam.  Dig in!
