Mini Pizza Crisp

These mini pizzas go together super quick and are a great gluten free party dish, snack or meal.  Enjoy as many as you like of these versatile, healthy and light pizzas!

Ingredients

– Food for Life Sprouted Corn Tortillas

– Pasta sauce (Our favorite is Whole Foods, 365 Organic Pasta Sauce, Fat Free.  Or Make your own with our recipe here!)

– Spinach

– White Onion

– Red Pepper

– Mushrooms

– Zucchini

Cashew Cheese (follow link for recipe)

 

Directions

Pre-heat oven to 400°F

Slice veggies and set aside.

Place tortilla on bottom baking rack for 3 minutes to warm and “crisp” up.

Once tortilla starts to crisp, remove from oven and cover with pasta sauce.  Layer spinach, cashew cheese, onion, pepper, mushroom and zucchini.
