Kelp Noodle Salad

This salad has a delightful crunch from the kelp noodles (found at health foods stores such as Whole Foods) and a variety of vegetables to up the anti on nutrition.  Enjoy with our simple 2 ingredient dressing for a delicious, quick meal!

 

Ingredients:

  • 1 Package Kelp Noodles
  • 1 Zucchini Spiralized (or use a grater for more angel hair like pieces)
  • 1 Red Pepper
  • 1 Head Broccoli
  • 1/4 Cauliflower
  • 1-2 Carrots
  • 1 Beet
  • 4 Tbsp. Capers
  • 2 Tbsp. Raisins
  • 10 Basil Leaves

 

Dressing:

  • 6 Tbsp. Dijon Mustard
  • 2 Tbsp. Lemon

 

Directions:

Mix all ingredients together.  Top with dressing, serve and enjoy!
