I wanted to make an alternative granola for those who, like me, do not always do so well with oatmeal found in traditional granola. This grainless granola is packed with protein and mostly seeds providing a close omega 3 to omega 6 ratio. It is sweetened with whole dates providing fiber and nutrients instead of syrup or sugar and has whole dried fruit without additives for a delicious hearty meal you can feel good about eating and giving to your family. We love to eat this as a snack or with almond milk.
1 cup shredded coconut, unsweetened
1 cup of sunflower seeds
1 cup pumpkinseeds
1/2 cup hemp seeds
1/4 cup sesame seeds
3 Tbsp. chia seeds
3/4 cup currants (or raisins)
3/4 cup goji berries (or other dried berry/fruit)
3/4 cup mulberries (or other dried berry/fruit)
8 large medjool dates
10 oz water
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. salt
pre-heat oven to 350 degrees
toast coconut for about 5 minutes
Toast sunflower seeds for 10 minutes
Toast sesame seeds for 10 minutes
Mix toasted coconut, toasted sunflower seeds, toasted sesame seeds, pumpkin seeds, hemp seeds and salt together in a large bowl.
In a blender, blend 8 medjool dates in 10 oz water with vanilla and cinnamon. Once dates are fully blended into a jell like consistency fold in chia seeds.
Pour date/chia mixture over seeds and mix well. Fold in currants, mulberries and goji berries.
Once mixed well and everything is coated, pour one layer at a time (so it cooks evenly) onto a non stick lipped baking sheet or baking sheet covered with parchment paper. As one batch finishes, place another in.Cook for about 25 – 30 minutes and stir every 5-10 minutes.
Let cool for about 15 -20 minutes and enjoy. Store in an air tight container in the fridge!
