Avocado, Tomato, English Muffin Delight

For such a simple, quick snack this is surprisingly satisfying and delicious.  The avocado adds a creamy almost buttery taste while the tomato gives it a refreshing lift, making it a great choice throughout the seasons!  Top with a little salt (our newest favorite is salt flakes!) and a little pepper to round it out!

 

Ingredients

  • Ezekiel English Muffin (gluten free or whole grain)
  • Avocado
  • Sliced Tomato
  • Salt
  • Pepper

Directions

Turn Broiler on HI or if you have a toaster…don’t 🙂

Defrost the English muffin, if kept in the freezer,  by placing in the microwave for 20 sec. on each side.

Note: if using the broiler make sure the top rack is high up near the coils.

Split the muffin and place under the broiler on hi or in a toaster until the top of the muffin just browns and is a little crispy.  If under the broiler, flip to make sure both sides are warm.

Slice some avocado and tomato while the muffin is toasting.  Be sure to leave the door of the broiler open slightly if you are broiling to make sure it does not burn.

Place the avocado slices on the the muffin (you can also mash it on like a spread), top with a slice of tomato and a sprinkle of salt and pepper!

Sit down and enjoy, preferably with a cut of green tea!
