Cheesy Chickpea Poppers
I am kind of on a roll with ideas for these chickpea snacks, so I figure why stop! It’s pretty safe to say almost everyone loves anything with a cheesy taste and this is the perfect high protein, high fiber, low fat salty snack to add it to. As with the original chickpea poppers, these are great to snack on at home, to bring on trips, camping, add on top of salads and great for kids! They assemble quickly and all you have to do is sit back and relax while they bake.
– 2 cans garbanzo beans, 15oz cans (
– 2 Tbsp. – 1/4 cup cashew pieces
– 1 Tbsp. lemon juice
– 1/4 cup reduced-sodium tamari (I originally tried this with Braggs liquid aminos. While it was tasty it was wayyy to salty).
– 1/4 nutritional yeast
– 1 clove garlic minced
– 1/4 tsp. ground turmeric
– 1/8 tsp. cayenne
pe-heat oven to 410 degrees
drain and rinse garbanzo beans. Add cashews to garbanzos in a medium to large bowl.
Mix together all other ingredients in a small bowl to make the dressing.
Pour dressing over garbanzo bean and cashews and mix well until everything is coated.
Spoon garbanzo bean mixture onto a baking sheet so they are in a single layer and pour any remaining liquid over top.
Bake for 20 minutes, flip/stir, and bake for another 15-20 minutes. If you would like them a little more crunchy, cook for 25 minutes.
