Cashew Lemon Cake Squares
The perfect “pick me up” on a long day, these delectable little treats are sure to satisfy! Made with super simple ingredients, these bars go together fast and provide you with key nutrients. These are great for on the road or pre/post workout as well! Packed with Cashews and hemp seed for high quality protein and healthy fats along with whole oats and dates for filing fiber and natural sweetness. These little energy nuggets taste like cake without all the bad stuff! Here at Pilot Fitness, you really can have your cake and eat it too!
- 10 Dates
- 1 Cup Whole Old fashioned Oats
- 1/4 Cup Cashew Butter
- 1/4 Cup Hemp Seed
- 2 Tbsp. Lemon juice
- 1 tsp. Vanilla Extract
- 1 – 2 Tbsp. Whole Cashews (optional)
- 1/2 tsp. salt
Pre-heat oven to 250 F°
Squeeze lemon juice and mix with vanilla (set aside)
Pit and chop dates into a fine paste. This gets sticky but not too bad. Put in your Food processor with the S blade along with the oats, cashew butter, hemp seed, salt, lemon juice/vanilla mix.
Blend until mixture balls up. You may have to stop it once to get contents off the sides and lid.
Add in whole cashews and pulse to mix in. (optional step)
Place parchment paper over a cookie sheet and lightly “grease” paper with coconut oil to prevent sticking
Fill a bowl with luke warm water to dip your hands in to keep bar mixture from sticking to them.
Place mixture on parchment paper and dip hands in water. Gently kneed bar mixture into a rectangle or square with your hands, dipping them in water bowl as needed.
Bake for about 35 minutes.
Let cool and cut into squares or slices. Makes about 9 servings.
