Baked Sweet Potato Fries

Who said you have to give up french fried to eat healthy?  Sometimes there is just a better way of doing things!  So here is a healthy spin to an old time favorite.  Sweet potatoes are a great source of vitamin A and fiber.  They also have a good amount of vitamin C, potassium, and manganese which is important for enzyme activation, bone formation and possible thyroid function.  This is an easy bake recipe that uses no oil and only a very limited amount of natural agave sweetener.  We have two flavors for you to try, one with spice and a sweet version.  Try making both and see what you like best!

Ingredients – Sweet

  • 1 Sweet Potato, sliced into fries (skin on)
  • 2 tablespoons Water
  • 1 tablespoon Agave Nectar
  • 1 1/2 teaspoon Cinnamon

Ingredients – Spicy

  • 1 Sweet Potato, sliced into fries (skin on)
  • 2 tablespoons Water
  • 1 tablespoon Agave Nectar
  • 1 teaspoon Chile Powder
  • 3/4 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper (optional)

Directions

Place sliced potato fries into a mixing bowl.  In a smaller, separate bowl, combine the water with and agave nectar and mix together.  Add the spices to the sweet water mix and incorporate.  Then drizzle over the sweet potato fries.  Using your hands, toss the fries until all are evenly coated.

Next, line a baking sheet with parchment paper and spread out the fries on the sheet so that none are overlapping each other.  Bake in the oven at 375°F for 45 minutes.  Remove from oven and using a fork, flip over fries (doesn’t have to be perfect) and then place back in the oven for an additional 30 minutes.

Once done cooking, remove from the oven and let cool for 5-10 minutes and sprinkle with some pink Himalayan salt (optional) and enjoy with our spicy veggie burgers and un-cheesy dip!
